Cooking for the Kitchen Illiterate

I can't believe it's September already! Fall is almost here in my neck of the woods (at least that's what I tell myself when the temperature's still hovering around Oh-my-God-it's-too-hot-for-me degrees), the kidlets are getting ready to go back to school (at least yours are, since my loins have not yet procreated), and the lazy days of summer are winding down.

I decided this month that I needed to showcase something quick, easy and simple. What could be better than waking up in the morning and having warm French Toast covered in maple syrup? But, who has time to make it in the morning when you just want to sneak in a couple more minutes of sleep?

Overnight French Toast

Ingredients:

  • 24-inch French baguette, cut into 1-inch slices
  • 6 large eggs
  • 3 cups whole milk
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup packed brown sugar, divided
  • 1 cup pecans, toasted
  • 4 tablespoons butter
  • 2 cups raspberries
  • maple syrup

1. Spray 9x13-inch baking dish with non-stick cooking spray.
2. Arrange baguette slices in baking dish in one layer (Note: I dare anyone who makes this to actually bring a tape measure to the grocery store to make sure the baguette is exactly 24 inches long. Hey, I don't make the rules for the ingredients, I just abide by them *snicker*).
3. In mixing bowl, combine eggs, milk, cinnamon, vanilla, and brown sugar.
4. Pour ingredients evenly over bread slices.
5. Cover and refrigerate overnight or at least 8 hours.
6. Attack Significant Other for the recommended 8 hours (Okay, so you don't have to take the entire 8 hours, but you have to do something to pass the time, right?)
7. When you wake up, preheat oven to 350ºF.
8. Bake for 20 minutes.
9. Serve with warmed maple syrup or your choice of toppings (I've seen recipes that call for pecans or raspberries or other various yummy toppings but I still think nothing beats warm maple syrup).
My mom used to make this whenever we had company over. It does serve around 6-8 people depending on how hungry they are. Make up a quick and simple fruit salad and you're golden

So there you have it… a nice and easy recipe for those of us who are not-so-great in the kitchen!
