Cooking for the Kitchen Illiterate

Well, it's been a year since I surprised you all with my homemade Macaroni and Cheese casserole, so I thought I'd make something a little nostalgic this month… Macaroni and Cheese!!! But, this is the easy kind!

Quickie Mac n' Cheese

1 1/2 to 2 cups of macaroni, cooked al dente
2 cups of cheese, shredded
1 cup evaporated milk
2 eggs
1/4 tsp. of nutmeg

Steps

1. Preheat oven to 425 F
2. Mix ingredients and pour into wide shallow dish. (I used my trusty corning ware, but you should be able to use whatever you have at hand.)
3. Bake until cheese is melted and nice and golden brown ~ around 10-15 minutes. (I left it in just a bit longer because I like my cheese nice and crispy)

I have to admit, after eating this, I do prefer my mom's version of Mac and Cheese that I made last year for you all, but this is a great substitute for when you're rushed for time and need to get something on the table.

So, there you have it. A nice and simple recipe that even I can make. And if a not-so-great chef can perfect a dish like this, you'll have no problems :
